And yet, Bouley managed to do this with 2 James Beard Foundation awards, 4 stars from the New York Times, and an unprecedented 29 rating in Zagat Survey. But even with this series of successes, Bouley was just getting started. His greatest contributions were yet to come.

When Bouley’s restaurant was damaged during the World Trade Center attack, he immediately launched a new bistro; but for the rescue workers instead. Serving over 1 million meals to emergency personnel 24 hours a day, 7 days a week, Bouley demonstrated his devotion to his craft. He could have continued making millions by resurrecting his restaurant in another part of the city. But instead, he offered his food to those who needed it most. Coordinating activities with the American Red Cross, David Bouley showed the world that the most delicious meals are the ones cooked with love, and not profit, in mind.
