What’s for Dinner? Rachael Ray to the Rescue!

It’s cold outside! On snowy days like this one, there’s nothing more satisfying than a steaming bowl of stew for dinner. The search for a hearty and filling recipe led to Rachael Ray’s website. Surely the “Queen of Quick”, first to coin such terms as “stoup” and “choup” (combinations of chili, stew and soup) would have an idea suitable for this evening’s meal.

A brief review of the site led to a recipe list of soups, stews, chilis, “stoups”, and “choups”, ranging from three variations on the classic chicken noodle to moo shoo stoup, a tasty-sounding creation involving shrimp, shitake mushrooms, and potstickers.

Tastebuds were more interested in an Italian flavor tonight, however. Ray’s Green Minestrone seemed to fit the bill. Featuring cannellini and garbanzo beans in addition to pasta and a host of green veggies (hence the name), this version of the Mediterranean classic filled bellies nicely while offering a balanced array of nutrients and protein. The only modification? This chef took a pass on the pancetta and added some dried oregano while sautéeing the onion.

A loaf of homemade bread and plenty of freshly grated Romano made this a dinner to savor!
